There are unending steps it seems, and I never remember when to do what, so I end up doing an acrobatic dance of sanitizing jars, peeling tomato skins, simmering lids and concocting recipe mash-ups. And the price of messing up? Botulism. So it's worth the dancing. (Funny side note: there was a recent outbreak of botulism at the prison around the corner from where I work. Prisoners were cooking up some moonshine in their cells and did not follow proper safety rules apparently. Funnier side note: I eat lunch at the prison regularly.)<br />

Regardless of the intimidation factor, I'm determined to master canning so that it feels effortless. I love gifting dilly beans and salsa during the holidays, and I would love to taste the fruits of my harvest of various herbs, fruits and vegetables from my garden long after the September.<br />

So I took my first go at canning these season with these apricots from my lonely tree outside, Three buckets of fruit that filed my sink, and *I think* successfully turned a bunch of sad apricots into happy little jams that are begging to be poured over cream cheese, dipped with pita chips, or glazed over pork and chicken. I experimented with mixins that were available in my garden or in my cupboards. I stuck with the ratio of 4 cups apricots to 2 cups sugar, and added at least 1 tablespoon of lemon juice to every batch. Besides that, I consulted various blogs for spicy recommendations and this was what I ended up with:<br />

For any apricots that were under-ripe, I threw them in the blender so that their greenish skins wouldn't affect the beautiful orange color. This seemed to work well. I boiled these ingredients for 8 minutes, then simmered them for about 15. The jam is a bit runnier than I'd prefer, so next time I will try simmering for longer. For some reason, I really didn't want to use pectin to thicken the jam...<br />
<br />
I ended up with 4-6 jars per batch, depending on the size of jars that I used. All in all, a great first time on my own!<br />

Add one banana, a bit of fresh peeled ginger, and a tablespoon of ground flaxseed. Add a bit more water if necessary. Find a big straw and enjoy summer-y goodness.<br />

Dave produced Asher's last <a href="http://itunes.apple.com/us/album/whos-going-to-hold-you-in/id335215836">album</a>, and beyond being an incredible musician with an ear for the Seafinch Sound, he is a treasure of a friend. Over the last few years, he and his wife Ally have become some of our closest friends. Close in the comfortable way that conversation might be infrequent, but when we do talk over the phone or spend time together on a long weekend, our hearts overflow and we know that we are knit together in the most beautiful of ways.<br />
<br />
Our friendship began in quaint Louisville Colorado in their homey condo on Main Street. We got to know each other over late nights of Settlers of Catan, strolls through the Louisville Farmers Markets and Dave's famous White Russians. Ally and I would hike in the foothills of Boulder, and we'd wonder together about how to love our husbands better, what it means to love Jesus, and what it takes to be a good friend. Looking back, I feel like my times with Ally taught me the beauty of womanhood and friendship. Knowing that Asher sitting at their kitchen table playing cards with them makes me a bit homesick for my friends. You feel like home, dear friends.<br />

</div>I had a dream this week that I was on a train into Boulder with friends (Erin Klassen - why you were selling jewelry on this train, I don't know!?) The scenery changed from the familiar landscape of majestic mountains and green valleys to miles and miles of treasure fields. Gold coins, semi-precious stones and treasure boxes filled the valleys until it was shining brilliantly. I think about the parable of the treasure in the field, and that the kingdom of God is like giving your life up for that treasure. We have found lifelong treasure in our friendships that began in Boulder. And we've really just started to unearth some of their luster and gleam.<br />

I've talked about working for <a href="http://www.tifie.org/">TIFIE</a> Humanitarian, but the other half of my job is working for Goal Zero, a company that makes portable solar power. Our stuff is really rad. Check it out <a href="http://www.goal0.com/">here</a>.<br />
<br />
We have a small group of 25 of us at the office, which significantly larger than the 8 of us that were employed there in March. Because we're small, we definitely have a family atmosphere at work, which makes for great parties (ie the apple bobbing, minute-to-win-it games, and general tomfoolery that goes on). Also everyone is really invested the success of the company, which means that we end up doing things that weren't in our original job descriptions.... like packing product in the warehouse last week to get orders out. It also means that our excitement level is pretty high (maybe that's stress/adreniline?) so the fact that we ran outside clapping and cheering on Friday when our newly wrapped trailer and van drove in isn't odd at all. It looks so good! We also have some pretty great company retreats up in the mountains of Morgan with our families.<br />
<br />
In general, we have a lot to celebrate on a regular basis, and I'm really thankful to work with such a great group of people who are committed to each other and to the success of our start-up.<br />

What a feat! I cried so many times...it stopped being surprising after a while. Whenever a runner would say 'thanks' when we cheered for them we they ran by, I'd cry. If there was a mom or dad who ran by their kids, I'd cry. When someone was limping, I'd cry. If someone was cheering for themselves, I'd cry. When Paul screamed when we ran across the finish line, I cried. He hurt his knees while training, so he was such a trooper! We happened to catch up to him right before he was going to the finish line so Asher ran with him for about a block. And yes, that made me cry too. Marathons are emotional business! I wish we would've had a picture of Cody and Paul together...<br />

We then packed the runners up and drove down to Vegas. Bad idea, considering they were incredible sore. Paul looked like a pirate the way he limped to our hotel - I felt very bad for suggestion a Vegas night after the fact. The highlight of our night in Vegas was definitely our dinner at <a href="http://www.mgmgrand.com/restaurants/seablue-mediterranean-restaurant.aspx">Seablue</a>, a restaurant at the MGM. My brother knows the chef since he competed on Top Chef, and Matt works with the chefs on Top Chef. We were treated like royalty and ate some top-notch seafood, like the tuna tartar, the fresh lobster tail, mussels from multiple oceans, Spanish trout, octopus, the list goes on and on. It was DELICIOUS. The facilitator is a wonderful woman who has a depth of wisdom and thoughtful comments that really inspire me as a teacher. A few things I've learned so far...<br />
<br />
1. Biblical storytelling is important to the listener, since we remember in pictures, but also important to society, as there are many people groups who don't have a written language.<br />
2. Although those of us who have grown up in church might be trained to 'apply' a story to our life or make a 'how-to' based on a story, story tellers have to be careful to stay true to the original story, and not inject what isn't in the text, including their own thoughts, wonderings, attitudes, teachable moments, etc... into the text. When we do this, we take away the listeners ability to form their own picture or come to their own conclusion. That would be a teaching, as opposed to telling a story. I think it's really beautiful how the Holy Spirit can use one story to encourage several listeners in unique ways. He is so good like that. (Disclaimer: I totally believer that our imaginations and imagining ourselves in Biblical stories is a great way to participate in the text, or to 'eat this book' as E<a href="http://www.amazon.com/Eat-This-Book-Conversation-Spiritual/dp/0802829481">ugene Peterson</a> would say, but would make sure I was very clear to my listeners that it was me, and not the text).<br />
3. It is hard to remember details. I heard in a public speaking class this week that our short-term memory can only remember 8 things at a time. In a similar vein, we were taught to try to condense every story into 10 sentences to make sure that we know the themes and the plot of the story before telling it. It is a difficult task.<br />
4. I am so thankful that there are thousands of stories in the Bible that reveal God and His character. I have been studying Hagar, and if the story of Hagar was the only story that I read, I would come to some harsh conclusions about God and the Israelites. But coupled with other stories of God's faithfulness and goodness, we see a multifaceted view of God and His love. I need to read more stories.<br />

Speaking of wonderful stories, today at church was unique in that we didn't have a traditional message, instead the speaker told a story set to music, that we all got to participate in. It was a beautiful parable of a young girl conquering fear, resting in the hiding places of her King, worshipping her way to victory in a battle against the enemy, and feasting at a table prepared before her enemies. It will be your new favorite dessert. Promise. A friend brought it over for dessert last week and this recipe impressed me with its simplicity and deliciousness. I wish I would've taken a photo but it was just so fast and simple, before I knew it the dessert was crafted and consumed. Hope you enjoy! Ingredients are simple - fruit, honey, sugar (3 parts) and coffee (1 part).<br />

Preheat the oven to 350. Halve the fruit (or pit) and place on baking sheet, skin down. Dollop honey onto each fruit segment. Bake for 12-15 minutes. Her dilly beans have me droolin' in salads (with feta!), sandwiches (with peppers!) and straight out of the jar (with a fork!). There isn't a better thing than juicy green beans that taste like salt and vinegar chips. The recipe is a neighborhood secret, but it involved what felt like barrels of vinegar, salt, dill weed (from my garden!) and cayenne pepper. We shall see how the experiment turns out in the next few weeks.<br />

I'm pretending he's coming to see me, even though he's really renewing his driver's license. He's currently working in NYC on Top Chef (sometimes, he's even in the show!) and lives the life of a vagabond traveler, so we don't see him often. He's been traveling to Singapore and Malaysia most recently (thanks to friends Fintan and <a href="http://jdbblogg.blogspot.com/">Jenn</a> for putting him up!). We plan on doing thing like driving to Vegas to shop and play, camping in the mountains, eating at Cafe Rio, having Tuesday-Night-Dinner with our Provo people, making gourmet salmon, and drink coffee. Maybe a few beers. It will be wonderful.<br />

Sarah Taylor was part of the reason we landed in Provo, and she has been a treasure of a friend these last two years. She moved this week to LA area to go to Fuller Seminary. She's kind of a genius, no big deal. She loved well, she thought hard, and she lived sincerely. I admire so much her honesty about her faith, feelings and actions - she reminds me constantly to consider why I think what I do, and what I even think, in general.<br />

You are loved dear Sarah, and will be missed.<br />
